Thursday, January 28th
6:00 to 9:00 PM
Chef Rich Rosendale is one of fewer than seventy Certified Master Chefs in the United States, a former United States representative at the Bocuse d'Or, and the founder of Rosendale Collective.
Spend an evening learning to make fresh pasta from scratch the way professionals do. You will weigh your own flour, mix and knead your dough, and learn how to roll it out to the right thickness every time.
From there you will shape ravioli with a classic ricotta and parmesan filling and a seasonal roasted squash filling with brown butter and sage. Chef Rich will also come around to each table to show tortellini, bowties, garganelli and agnolotti. You will also cut your own fettuccine.
The evening ends at the table with Chef Rich's lasagna and garganelli alla vodka.
Everyone goes home with a tray of their own handmade pasta, plus a recipe card with cooking and freezing instructions so you can recreate the night at home.
