Elevated Italian Summer Dinner: Handmade Pasta & Seasonal Techniques

Celebrate the flavors of summer with this hands-on Italian cooking experience focused on fresh pasta, seasonal ingredients, and refined technique. This interactive class blends classic Italian foundations with a modern approach—designed to help you create restaurant-quality dishes at home.
Led by Certified Master Chef Rich Rosendale, former U.S. Bocuse d’Or competitor, former Executive Chef of The Greenbrier, and longtime owner of Roots 657 in Leesburg.
You’ll work with fresh ingredients, learn essential pasta techniques, and discover how to balance flavors across a complete Italian meal.
What You’ll Experience:
Bruschetta station with seasonal toppings, including traditional tomato & basil, mushroom with goat cheese, grilled peach with goat cheese, and smoked salmon with balsamic glaze
Handmade corn & ricotta tortellini
Shrimp scampi
Roasted lemon, garlic & herb chicken
Arugula salad with pecorino, toasted pine nuts, artichokes, honey & lemon
Warm focaccia with olive oil
Zabaglione with fresh berries & amaretto
After a brief chef demonstration, you’ll rotate through guided stations to prepare, shape, and finish key components of the meal. Along the way, you’ll learn pasta fundamentals, sauce techniques, and how to bring everything together into a cohesive, restaurant-quality plate.
The evening concludes with a shared dinner featuring everything you’ve prepared.
